Three Easy dinners to make with a rotisserie chicken
These easy Mexican style dinners come together in a matter of minutes, all are gluten free, delicious, and sure to please the whole family!
Oven Baked BBQ Chicken Nachos
Hello, my name is Lisa and my super power is to turn ANY left overs into Nachos! Leftover chicken – Nachos! Leftover Beef – Nachos! Leftover pork – Nachos…. you get the idea.
For this recipe you can use fresh or leftover rotisserie chicken and get the same delicious results.
You will need:
Place chips on a baking sheet, top with chicken, beans, and cheese – bake in pre-heated oven at 400 for 10-15 min or until cheese is browned and bubbly.
Top with Avocado, tomato, black olives, sour cream and enjoy!
Chicken Enchiladas Verde
I love enchiladas! This is a delicious, fast and easy recipe! You can stuff and roll the tortillas or layer them like a lasagna, either way you will love them!
You Will Need:
tortillas ( I use either corn tortillas or GF flour tortillas, brands I recommend are La Tortilla Factory or Siete)
A jar of Green enchilada sauce (look for one without dyes or HFCS)
lots of cheese!
Lay the tortillas out and coat both sides with the enchilada sauce, place the chicken and some cheese on the tortillas and roll up. Cover enchiladas with remaining sauce and as much cheese as you want. Bake at 350 for 30 minutes or until hot. I like to broil for an additional 5 min to get the cheese brown and crispy.
Serve with lots of sour cream
White Chicken Chili
My beautiful sister Kristyn, made THE best White Chicken Chili when she came to visit me in Charleston. I hope that my rendition makes her proud <3
You will need:
Shredded Rotisserie chicken
5 cups Chicken Broth
A can of White beans
A jar of Green salsa, I like tomatillo (look for one without dyes or HFCS)
Spices that you like, such as cumin, oregano
To make :
Put the broth, chicken, beans and salsa in a pot and heat through, add spices to your liking.
Serve with Sour Cream, cheese, chips, avocado
