Chicken with bacon, Brussels and sweet potatoes
This is delicious and easy to make. It is Whole 30 compatible, dairy and gluten free. If you switch out the sweet potatoes for another vegetable such as broccoli or cauliflower this would be Keto as well. I used Cornish game hens but you could use any chicken you like. You do not need any additional oil or butter because the fat from the bacon and juice from the chicken will provide all of the fat you need.
- Brussel Sprouts
- one large sweet potato
- 5 slices of raw bacon
- Spice blend of choice ( I use Wildtree’s scampi blend, but you may use anything you like)
Get out a large roasting pan or a cookie sheet.
Cut up fresh Brussels & sweet potatoes
Put 4 Cornish game hens on top
Put 5 chopped raw strips of chopped bacon on top of chicken
Sprinkled with garlic & scampi blend
Roast in the oven for about an hour & 15 minutes
